KitchenCodeCalc publishes transparent, code-referenced planning tools. We do not invent CFM rates, interceptor volumes, or cleaning intervals — we map published guideline tables into interactive worksheets and clearly label them as preliminary.
Code-prescriptive exhaust uses the IMC 2024 §507.2.10 / §507.3.4 minimum net airflow per linear foot for unlisted hoods by hood style and duty class (eyebrow hoods are not allowed over heavy or extra-heavy duty; backshelf hoods are not allowed over extra-heavy duty). Double-island rates apply per side: enter the island length once and the total covers both back-to-back sides (for example, 300 CFM/lf per side × 2 sides × 10 ft = 6,000 CFM). A separate ASHRAE / UL 710 listed-hood typical range is shown because listed hoods may be approved at their listed rate. Make-up air is shown at 80–90% of exhaust as a common balance band. Grease duct area and equivalent round diameter use a 1,500 FPM design velocity (the code minimum is 500 FPM). Canopy hoods are checked against the IMC §507.1.6.1 rule of at least 6 inches of overhang on every open side (wall canopy: both ends + front; island canopy: both ends + front and rear); non-canopy hoods follow §507.1.6.2 and their listing.
Hydromechanical sizing follows PDI-G101: sink volume (L × W × D × bowls ÷ 231) × 0.75 fill factor ÷ drain period (1 or 2 minutes), plus other fixture flows, rounded up to standard PDI sizes (4, 7, 10, 15, 20, 25, 35, 50, 75, 100 GPM) with rated grease capacity of 2 lb per GPM. Gravity interceptors are sized from connected drainage fixture units using UPC Table 1014.3.6 (8 DFU → 500 gal through 2,640 DFU → 15,000 gal). An EPA meals-method cross-check (peak meals × waste flow × retention time × storage factor) is shown, and the larger of the two is reported as the governing size.
Inspection/cleaning intervals follow NFPA 96 Table 12.4 by cooking volume (solid fuel monthly; high-volume quarterly; moderate semi-annual; low-volume annual). Budget ranges are industry ballparks: about $22–$42 per total linear foot of hood, plus a setup allowance for each additional hood, with a minimum service-call floor, then ×1.30 for multi-story duct runs and ×1.20 for poor access. They are not quotes.
Cookline/dishpit zones default to trowel-applied urethane cement for thermal-shock washdown resistance. Prep/storage zones default to 100% solids broadcast epoxy. Cove base, substrate condition, and grit profile adjust cost and downtime ranges. Health-department expectations track FDA Food Code language for smooth, non-absorbent, easily cleanable surfaces with integral cove.
All outputs are for preliminary planning only. Final sizing, product selection, and installation require approval by the local Authority Having Jurisdiction (AHJ) and licensed MEP / trade professionals. Local amendments, manufacturer listings, and site conditions always control.
